Yields 10 guests

Ingredients for the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Cocktail (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Place every ingredients in a pan, heat until it reaches a simmer, agitating so the sugar melts. Then, remove from the stove and leave to cool fully. Transfer to a sealable bottle, seal keeping it chilled, where it will keep for about one month.

Preparing the Cocktail Base: Pour all the liquids into a sizeable container, allow it to infuse for 60 minutes, then strain best through muslin, so it's perfectly clear.

For serving: Pour 85ml from the premix to a mixing glass containing ice, and stir gently for a minute to cool it down. Pour into a chilled martini glass or equivalent, decorate with the cranberries and finish by giving it a light spray of the essential oil above the glass.
